A Note on Processed Plant-Based “Substitutes”

One area that requires particular caution for vegetarians and plant-based eaters is reliance on processed meat substitutes and unfermented soy products. Many of these products are higher in refined carbohydrates, processed oils, and additives than their whole-food plant-based counterparts, and can work against the goals of this approach despite being marketed as “healthy” alternatives. Whole, minimally processed plant fats and proteins generally serve this approach far better than heavily processed substitutes.
